Why density matters

Salt (table) has a density of 1.22 g/ml. Compare that to water at 1.0 g/ml — a denser ingredient will give a higher gram count per cup. Generic converters that assume 240g per cup for everything would give you 52g less than the actual weight — which can ruin precision bakes.
